This recipe is definitely one of our family favorites. I started making this soon after my husband and I got married, and it became a frequent request by him.
INGREDIENTS:
- 8 oz. penne pasta
- 1 lb. boneless, skinless chicken breast (cut into bite-size pieces)
- 1 egg, lightly beaten
- 1/2 cup plain bread crumbs
- 1/4 cup olive oil
- 3 1/2 cups halved grape tomatoes
- 2 garlic cloves, minced
- 1/2 cup heavy cream
- 1/2 tsp. dried oregano
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 2 cups shredded mozzarella cheese
- 1/2 cup parmesan cheese
- fresh basil, to taste
