I made this cookies-like, healthy scone recipe yesterday for the mother’s day mini party that I have organized for all the mothers in our family, we had a lot of fun with our kids, husbands and gifts. The idea was great and we will repeat the next year. Besides this lemon scone recipe, I made 3 more kinds of cookies, but this one has disappeared very quickly and people was asking for more,

Ingredients
2 cups flour
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 lemon zest
3 tablespoons unsalted butter, cold
1 cup whipping cream
1 egg yolk
1/2 teaspoon vanilla extract

Instructions
- Combine flour, sugar, baking powder and salt in a large bowl, add lemon zest and mix with your hand.
- Cut the butter into small pieces before adding to the dry ingredients. Mix with your hand until the mixture resembles fine crumbs
- In another medium bowl, beat the egg’s yolk, add whipping cream and vanilla extract, mix with a fork until combined, add to the dry ingredients and stir until dough holds together
- Knead dough on a flour-dusted surface forming a ball, flatten the ball into a disk about 3/4 inch. (2 cm) thick, cut with a round mold pieces of 2 inch. approx., if you don’t have a round cookie mold use the edge of a small water glass to make the job.
- Transfer the scones pieces to a baking sheet, and bake for 15 – 18 minutes at 400 ºF (200º C), let cool on the sheet a few minutes.
- Spread the bottom of a scone with jam and stick another scone to it, just like the picture.
