Banana cake with accents of coconut, almond and vanilla is a lovely treat for any occasion but can really shine as a birthday cake for a Paleo following family member or someone with a gluten sensitivity. Make sure your bananas are very ripe to get the right texture and full flavor
Ingredients
- 7 medium ripe bananas
- 7 large eggs, at room temperature
- ½ cup melted coconut oil
- ¼ cup pure maple syrup
- 1 tablespoon pure vanilla extract
- 4 cups ground almond meal
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- Coconut oil for greasing cake pans
