Chocolate Chocolate Chip Zucchini Bread l www.SimplyScratch  (2)

Ingredients:

2 cups (heaping) grated Zucchini
2 cups Unbleached All Purpose Flour
3 tablespoons Natural Unsweetened Cocoa Powder (not Dutch processed)
1 tablespoon Cinnamon
2 teaspoons Baking Soda
1 teaspoon Kosher Salt
1/4 teaspoon Baking Powder
3 whole Eggs
2 cups Granulated Sugar
1/2 cup Unsweetened Applesauce
1/2 cup Grapeseed Oil
3 teaspoons Pure Vanilla Extract
2 cups Chocolate Chips

Lemon Dijon Grilled Chicken l www.SimplyScratch.com #grillingrecipe

Ingredients:

1/4 cup Dijon Mustard
1 large Lemon, juiced
1 tablespoon Extra Light Olive Oil
2 teaspoon Worcestershire
1/2 teaspoon Marjoram
1/4 teaspoon Coarse Ground Black Pepper
4 boneless, skinless Chicken Breasts, pounded thin
  

Directions:

In a measuring cup combine mustard, lemon juice, olive oil, Worcestershire, marjoram and black pepper.
Place the thin chicken breasts into a bowl, pour the marinade over prepared chicken and toss to coat. Leave the chicken on the counter for at least 15 minutes.
Preheat a grill to medium/medium-high and grill for 6 to 8 minutes a side. Adjust the heat accordingly.
Remove to a cutting board, tent with foil and allow the chicken to rest for 5-8 minutes before serving.

Ingredients:

1 stick {1/2 cup} Unsalted Butter
1 cup Unbleached All Purpose Flour
2 cups Sugar, divided
1 tablespoon Baking Powder
1/8 teaspoon Kosher Salt
1 cup Half and Half or Whole Milk
5 cups sliced Fresh Peaches {about 5 or 6}
1 Lemon, juiced
1/2 teaspoon Pure Vanilla Extract
1/8 teaspoon ground Cardamom
  

Directions:

Preheat oven to 375F.
In a 10-inch skillet melt the butter over medium heat. Continue to brown the butter until it's a deep golden color and smells nutty. Pour the brown butter into a 9x13 baking dish.
In a medium bowl combine the flour, 1 cup sugar, baking powder and salt. Stir to combine. Pour in the cup of half and half {or whole milk} and stir until just combined. Pour the batter into the baking dish over top of the butter.
Add slice peaches, the remaining cup of sugar and the lemon juice into a medium pot. Bring to a boil. Once the liquids have reached a boil remove and stir in the vanilla and cardamom.
Spoon the peaches and all their liquids evenly over top of the batter. Bake in preheated oven for 40 minutes, rotating the pan halfway during baking to ensure even cooking.

Ingredients:

2-1/2 cups Lightly Salted Peanuts {salted can be used, just reduce the amount of salt used to season}
4 tablespoons Grapeseed Oil
2 tablespoons Honey
Kosher Salt to taste
  

Directions:

Place peanuts into a food processor. Turn on and let run until the peanuts are well ground and resembles coarse wet sand. Slowly pour in the oil. Stop, scrape down the sides of the bowl and replace the lid. While processor is running add in the honey, season with kosher salt according to your taste. Store in an airtight jar in the fridge, but just be sure to let it sit out for a few before using.
*for chunky peanut butter, add in a half cup {or more} of chopped peanuts.

Ingredients:

1/2 cup of any Whole Grain Mustard
1/2 cup of Honey
Juice of 1/2 a Lemon
1 Garlic Clove, smashed and minced
1/2 teaspoon Paprika
1/2 teaspoon Kosher Salt
1/4 teaspoon Cayenne Pepper
1/4 teaspoon Red Pepper Flakes
4 Boneless Skinless Chicken Breasts
  

Directions:

Whisk all ingredients in a small bowl.
Reserve 4 tablespoons of sauce and then pour the rest over the chicken, toss and cover with plastic wrap and let it sit for about 30-45 minutes at room temp.
Preheat the grill on medium- medium high heat, grill chicken for about 6 to 7 minutes per side or until chicken is done.
Pour the reserved 4 tablespoons of honey-mustard sauce over chicken and let rest under foil for about 5 minutes.
Serve.
